Michael's Famous Baby Spinach Turnovers Ingredients for Dough
  • 1 cup all purpose flour
  • 1/4 teaspoon sea salt
  • 2 tablespoons extra virgin olive oil
  • 1/8 -1/2 cup ice water
Ingredients for Spinach Filling
  • 3/4 lb. baby spinach
  • 1 table spoon extra virgin olive oil
  • 1 table spoon lime juice
  • 1/8 teaspoon fresh nutmeg

Directions
Directions for Dough:
Make dough in food processor or kneed for 5 minutes. Let rest in refrigerator for 10-15 minutes. Cut into 6 pieces and roll out on floured board.

Directions for Spinach Filling:
Sautee spinach and above ingredients in pan until spinach is wilted. Drain well before placing on dough rounds.

Place spinach mixture on one side of rolled out dough rounds. Fold over like half moons using fork to pinch down the open edge.

Bake Spinach Turnovers at 450° for 15-20 minutes or till golden.
