Michael's Famous Baked Shrimp & Fresh Corn - Featured on WHAI
  • 2 lbs. Large Shrimp 21 to 25 per pound. Cleaned & de-veined
  • 6 ears of Butter and Sugar Corn
    (Remove uncooked cornels from cob place in large bowl to accommodate other ingredients)
  • 1 1/2 cups diced medium ripe tomatoes
  • 1/4 cup chopped Basil
  • 1 1/4 cups white wine
  • Salt and Pepper to taste
  • 3 or 4 chopped scallions or charlottes finely minced
  • 1/4-cup butter melted
  • 1/4-cup extra virgin olive oil

Directions


Take 12"x12" heavy aluminum foil to make individual packets. Need 6 packets for 6 servings. Place 6-8 shrimp per packet. Combine all ingredients to corn and mix together in bowl.

Take 1/4 size cup to combine corn and tomato mixture over shrimp that has been placed in individual pieces of aluminum sheeting. Fold up each individual packet. Pre-heat oven to 450°. Place packets on cookie sheet and cook for 10 minutes only. Check for readiness. Shrimp should be pink and steaming Serve individual packets with rice or salad.
