Michael's Famous Roasted Root Vegetables - Featured on WHAI
  • 3 Medium potatoes, peeled and cut into large chunks
  • 2 Medium beets, peeled and cut into large chunks
  • 3 Medium carrots, peeled and chunked
  • 1 Large onion, peeled and chunked
  • 2 Medium turnips, peeled and chunked
  • 4 Tbl. Olive oil
  • 1 tsp Italian seasoning
  • 1 Tbl. Chopped garlic
  • salt and pepper to taste

Place all ingredients in baking pan. Bake at 375° for 40 minutes and test vegetables for tenderness with a fork. When fork goes in easy, they are done.
