Rhubarb and Strawberry Scones - Featured
on WHAI
- 1 1/2 c. all purpose flour
- 1 c wheat flour
- 1/2 tsp baking powder
- 1/2 tsp. baking soda
- 1/2 tsp salt
- 1/4 c. sugar
- 1 stick cold, unsalted butter
- 1 c. sour cream
- 1 1/4 c. buttermilk
- 1 1/2 c. combined strawberries and rhubarb, chopped
Place rhubarb and strawberries in colander. Pour 8 cups
of boiling water over them and let stand. In the meantime,
combine first 6 ingredients. Cut in the butter. Then
add the rest of the ingredients. Form into 8" rounds.
Cut into 8 pieces and bake at 350° for 20-25 mins.
