Michael's Famous Pumpkin Bread - Featured on WHAI
  • 3 cups of sugar
  • 4 eggs
  • i cup canola oil
  • 2/3 cups of cooked pumpkin* (or canned pumpkin)
  • 2 cups of chopped pecans
  • 3 1/2 cups of flour
  • 1 1/2 teaspoons of salt
  • 2 teaspoons baking soda

*If using fresh cooked pumpkins: Cut pumpkins in half and cook at 450° for 35 minutes.

Directions

Beat sugar and eggs. Add oil, water, and pumpkin. Combine remaining ingredients. Bake at 350° for 1 hour in 2 large greased loaf pans 1/2 full.
