Famous Pumpkin Bread
- Featured on WHAI
- 3 cups of sugar
- 4 eggs
- i cup canola oil
- 2/3 cups of cooked pumpkin* (or canned pumpkin)
- 2 cups of chopped pecans
- 3 1/2 cups of flour
- 1 1/2 teaspoons of salt
- 2 teaspoons baking soda
*If using fresh cooked pumpkins: Cut pumpkins in half and cook at 450° for 35 minutes.

Directions
Beat sugar and eggs. Add oil, water, and pumpkin. Combine remaining ingredients. Bake at 350° for 1 hour in 2 large greased loaf pans 1/2 full.
