Michael's Famous Potato Cheese Soup - Featured on WHAI
  • 2 tablespoons canola oil
  • 1 tablespoon minced garlic
  • 1 cup chopped leeks or green onion
  • 3 1/2 cups diced potatoes
  • 3 cups vegetable stock or chicken stock
  • 1 cup grated cheddar cheese
  • 1/2 cup milk or half & half
  • 1/4 cup chopped fresh dill or parsley

Directions


Heat oil in sauce pan over medium heat. Add garlic and leeks. Sautee for 5 minutes. Add potatoes and stock. Bring to boil. Cover and simmer for approximately 15-20 minutes. Stir in cheddar cheese, milk, dill and cook for 1 minute more. Serve.
