Michael's Famous Pesto Beet Dip - Featured on WHAI
  • 1 16 oz. can sliced beets
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic
  • 3 tablespoons chopped walnuts
  • 3 tablespoons of a good grating cheese (romano)
  • 1 shot of liquid smoke
  • Salt & Pepper
Place beets in blender. Add 3 tablespoons extra virgin olive oil, 2 cloves garlic, 3 tablespoons of chopped walnuts, liquid smoke and cheese.

Blend.

Serve with taco chips.
