Michael's Famous Peanut Corn Chowder - Featured on WHAI
  • 2 tablespoons butter
  • 1/4 cup chopped celery
  • 1/4 cup chopped onions
  • 1/2 cup chunky peanut butter
  • 2 cups Vegetarian Stock
  • 2 cups cornel corn fresh or frozen
  • 1 cup Half & Half or 1 cup heavy cream
  • salt & black pepper to taste

Cook onions & celery in sauce pan combined with butter. Sautee slowly on low flame for 5 minutes or until onions are golden brown. Remove sauce pan from heat. Add 1/2 cup peanut butter (slowly combining peanut butter with above ingredients) The peanut butter will melt. Make sure it is done when sauce pan is off heat.

Place sauce pan back on slow heat immediately adding vegetable stock. Cook 1 more minute. Add corn and cream ( or Half & Half). Just heat until corn is tender.

Serve with chopped peanuts.
