Michael's Famous Split Pea with Ham Soup - Featured on WHAI

(Michael says, ŇItŐs wonderful for after EasterÓ)
  • 2 lbs. Dried green split peas
  • Ham bone from Easter ham, or ham hocks
  • 1 Large chopped onion
  • 2 Cloves minced garlic
  • 2 Large carrots, diced
  • 12 c. Water
  • 2 Bay leaves
  • Any leftover ham, sliced and chopped
  • 2 Cubes chicken bullion
  • Salt and pepper to taste

In a large stock pot, combine all ingredients except diced ham. Bring to a boil. Cover and simmer over low heat for approximately 1 hour until peas are tender. Remove ham bone/hocks and 5 minutes before serving, add chopped ham.

Serves 12-18 servings.
