Michael's Famous Pasta with Fresh Broccoli - Featured on WHAI
  • 1 Large pot salted water
  • 1 Large bunch of broccoli, cleaned and speared
  • 3 Cloves garlic, chopped
  • 3-4 Tbls. Virgin olive oil
  • 1 lb. Ziti or rigatoni pasta
  • 1/4 tsp. Red pepper flakes
  • Salt and pepper to taste
  • Grated parmesan or romano cheese to taste
Boil broccoli for 5 minutes. Remove broccoli from water, and reserve salted water for pasta. Set aside 1 cup of broccoli water before adding pasta.

Run broccoli under cold water to stop cooking and set color.

In a small frying pan or saute pan, saut˙ garlic in olive oil until lightly golden. Immediately add 1 cup of reserved broccoli water, broccoli, and red pepper flakes. Saut˙ until heated through. Boil pasta while broccoli is heating.

Cook pasta until al dente, about 8-10 minutes, and drain. Put pasta in favorite bowl, add broccoli mixture to pasta. Add salt and pepper to taste and toss. Pass the parmesan or romano cheese.
