Michael's Famous Mexican Shrimp - Featured on WHAI
  • 2 table spoons extra virgin olive oil
  • 2 cloves chopped garlic
  • 3 scallions chopped
  • 1 jalopino pepper chopped
  • 1 teaspoon of grated dried orange peal
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1 can of 26 oz. diced tomatoes
  • 1 lb raw large shrimp
Saute garlic scallions pepper. Add orange peal and can of tomatoes. Cook for 10-15 minutes. Add shrimp AND cook for 3 minutes more until shrimp turn pink.

Serve with rice.
