Michael's Famous Mashed Potatoes, 7 Different Ways
  • 3 to 4 lbs. Red potatoes, washed and diced
  • 3 to 4 lbs. White potatoes, peeled, washed, and diced
  • 1/4 lb. Butter
  • 1/2 pint Half and half (milk and cream)

Boil potatoes for 1/2 hour until tender and drain. Add butter and half and half. Smash potatoes. Then choose your favorite variation below:

Roasted Garlic: roast 4-5 cloves of garlic, coated with olive oil, in medium (350°) oven for 40 minutes. Squeeze the roasted garlic into the mashed potatoes and mix.

Horseradish: Add 2 Tbl. prepared horseradish to the mashed potatoes.

Salsa: Add 1/4 c. prepared salsa to the mashed potatoes.

Watercress: Add one small bunch of finely chopped watercress before serving.

Sour cream curry: Add 1/2 c. and 2 Tbl. of curry and mix.

Artichoke: Add 1 small jar of marinated or canned artichoke hearts, finely chopped.

Lavender: Soak 1/4 tsp. dried lavender blossoms for a few minutes in the half and half before adding to potatoes.
