Michael's Famous Cream of Peanut Soup - Featured on WHAI
  • 1 quart chicken stock
  • 2 chopped carrots
  • 1 yellow onion chopped
  • 1 cup of smooth style peanut butter
  • 1 cup chopped dry roasted peanuts for garnish
  • 1 cup 1/2 &1/2 or heavy cream

Directions

 
Boil chicken stock in pan with carrots and yellow onion.

Add peanut butter and cook until carrots are tender.

Puree all above ingredients in blender or food processor.

Stir in 1/2 & 1/2 cream. Garnish to taste
