Michael's Famous Corn & Tomato Casserole - Featured on WHAI
  • 6 slices of bacon
  • 4 cups of sliced tomatoes
  • 1 cup of cracker crumbs
  • 2 cups of cooked corn
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce

Directions


Cook bacon 1/2 way, drain and reserve fat. Grease 1 1/2 quart casserole dish with vegetable oil. Layer tomatoes, cracker crumbs and corn, ending with a layer of corn.

Mix salt & pepper to reserved bacon fat and Worcestershire sauce. Pour over vegetables and top with bacon slices. Bake in oven at 375° for 45 minutes.
