Jay & Jeff's Cold Strawberry Soup
  • 4 cups strawberries
  • 1/4 cup Brandy
  • 1/3 cup sugar
  • 3 cups heavy cream
  • 3 cups apple juice
  • 1 tea spoon lemon juice
  • 1/2 cup honey

In a large bowl combine strawberries, sugar and brandy. Refrigerate for 2 to 24 hours. Puree the berry mixture . Add remaining ingredients to bowl . Mix well cover and refrigerate 2-3 hours more. Serve with sliced berries on top with mint leaf. Serves 6
