• 1/2 cup oil (canola)
• 1 cup sugar
• 2 eggs
• 1 1/2 cups rhubarb, chopped cooked & drained
• 1 1/2 cups all purpose flour
• 1 tsp. baking soda
• 1 tsp. salt
• 1 tsp. cinnamon
• 1/2 tsp. nutmeg
• 1/2 tsp. cloves
• 1/2 tsp. allspice
• 1/2 cup walnuts (optional)

Combine all ingredients in mixing bowl stirring with wooden spoon. Pour into 8"x8" baking pan. Bake at 350° for 30 minutes.
