Michael's Chicken Cutlets w/Lime or Lemon - Featured on WHAI
  • 6 boneless chicken cutlets
  • 3 tablespoons xvoo
  • 2 tablespoons sweet butter
  • 1 tablespoon of grated lime zest
  • 1/2 cup white wine
  • 1 tablespoon chopped mint
  • 1 cup sour cream
  • juice of 1/2 lime

Sautee boneless chicken cutlets in butter and olive oil in sautee pan. Remove chicken from pan and add wine, zest, juice of 1/2 lime. Reduce by app. 1/2. Add lemon, sour cream and mint. TO HEAT ONLY add chicken to sauce.
