Famous Butter-Scotch Zucchini Bread

- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large beaten eggs
- 1/2 cup white sugar
- 1 teaspoon ground cinnamon
- 1/2 cup canola oil
- 1 1/2 grated and well drained zucchini. (See pre-prep. below)
- 1/2 cup chopped wall nuts
- 6 ozs.Butter-Scotch chips

Zucchini Preperation
Place 2 grated zucchini in colander for 1 hour combined with 1
tablespoon of salt in sink, to allow water to be removed from
zucchini.
In a large bowl combine eggs, sugar, oil and cream. Mix well
until cream is well beaten. Add all dry ingredients to above.
Mix well. Fold in Zucchini & Butter Scotch chips.
Grease and flour a 9x5 loaf pan. Pour ingredients into pan. Preheat
oven to 350°. Bake at 350° for 1 hour. Cool completely before removing
from loaf pan.
