Michael's Famous Beef Soup - Featured on WHAI
  • 2 lbs. Chuck beef OR
  • 2 lbs. Shanks of beef OR combination of the two
  • 2 Tbl. Olive oil
  • 3 Medium carrots, diced
  • 2 Stalks of celery, chopped
  • 2 Medium onions, chopped
  • 2 Bay leaves
  • 1 Tbl. Italian seasoning
  • 6 c. Beef stock or water
  • Salt and pepper to taste

In a heavy, cast iron or enamel pot, sautee beef in olive oil until brown over medium flame for 5 minutes. Add vegetables, beef stock, and the rest of the ingredients. Cook until meat is tender, about 1 hour, on low flame.

Serve with rice or noodles.
