Michael's Famous Apricot Cake
  • 1 c. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. grated nutmeg
  • 1/3 c. sugar
  • 5 Tbl. unsalted butter
  • 1 large egg
  • 1/3 c. milk
  • 1 tsp. vanilla
  • 8-10 large apricots, halved with stones removed

Topping
  • 3 Tbl. butter
  • 1/4 c. sugar
  • 1 tsp cinnamon

Mix together the dry ingredients, and cut in butter. Mix together the liquid ingredients and add to dry ingredients. Pour batter into a buttered 9x13 pan. Place the apricot halves on top of the batter. Mix the topping ingredients and spoon over the batter and apricots. Bake at 400° for 45 minutes.
